Tonight we are having Shrimp Rougille for dinner. This is a Mauritius Creole dish with a rich, spicy tomato base flavored with ginger, garlic, chilies and thyme. A perfect combination of African, French and Indian influences. I had eaten it for breakfast topped with creamy scrambled eggs at the Fours Seasons in the Seychelles when I visited two years ago. The chef was nice enough to share the ingredients. While celery and carrots are in traditional rougailles, I prefer mine with some veggies! Want to try to it?
