Olive oil vs Vegetable oil
Olive oil and vegetable oil differ in the way in which they are made and processed. The amount of processing also affects the nutritional composition of oils.
Monounsaturated fats (in olive oil) have anti-inflammatory benefits and also keep the heart healthy, while Omega-6 polyunsaturated fats (in vegetable oils) increase risks of inflammation if taken in excess.
Word of caution:
Some olive oils undergo a lot of processing as well and therefore are deficient in vitamins, minerals and antioxidants.
Refined olive oils will not include EXTRA VIRGIN or VIRGIN on the label, so avoid these ones.
